Etymology
Borrowed from Japanese 餃子 (gyōza), itself borrowed from Mandarin 餃子/饺子 (jiǎozi), possibly from a variety without significant palatalization, such as Peninsular Mandarin (Weihai: /ciau²¹³ tsz̩⁰/), or from Mandarin before palatalization (ie. *giǎozi). Doublet of jiaozi.
