Borrowed from Medieval Latin asparagus, sparagus, from Ancient Greek ἀσπάραγος (aspáragos), variant of ἀσφάραγος (aspháragos). Displaced Old English eorþnafola. Later became an eggcorn in dialect as sparrowgrass.
